| Cod (Gadus morhua) is fished in the cold waters of the North Sea, following an artisan process that has not changed in centuries. Once caught, the process of chopping off the head, cleaning and slicing is done by hand. Immediately after, the cod is salted and cured for months in the vessel hold. This is how we obtain our cod, recognizable for the smooth golden colour of its meat, its low humidity and its extraordinary flavour. |
