Le
ricette della tradizione, i sapori
antichi, le farine di cerali di qualità indiscussa,
come il farro, il kamut® ,
macinate a pietra, la lievitazione con
lievito naturale, l’uso di
condimenti di qualità come olio
extra vergine d’oliva italiano,
pomodoro, mozzarella sono gli ingredienti
che contraddistinguono le specialità da
forno dell’Antica Cucina.
A questo si deve aggiungere la passione
per le cose buone e la voglia di migliorare
e sperimentare che hanno portato alla
creazione di tantissimi prodotti esclusivi
come le sfogliatine al tè verde
senza lievito, ma anche le basi per
pizza, la pizza senza lievito, i cracker
,le focacce ed i rustichelli. Senza
dimenticare il pane dei poveri, “La
Piada” ( tortillas) considerata
anche un azzimo perché è completamente
senza lievito,che ancora oggi viene
cotta a mano una ad una su piastre
di ferro come la tradizione richiede.
Come se questo non bastasse dal 1998
ha compiuto la scelta coraggiosa di
realizzare solo prodotti da agricoltura
biologica sottoponendo l’intera
azienda alla certificazione e controllo
volontario secondo il Regolamento CE
2092/’91, il quale richiede notevole
impegno di risorse umane e finanziare
vincolando l’azienda
nell’uso esclusivo di ingredienti biologici, nel rispetto dell’ambiente
e della salubrità dei prodotti.

The recipes of tradition,
the ancient tastes, the cereal’s flours with
undisputed quality as the Farro,(Spelt)
the Kamut , round to stone, the levitation
with natural yeast, the use of quality
seasoning as Italian extra virgin olive
oil, tomatoes and Mozzarella are the
ingredients that countersign the oven
specialties from L’Antica Cucina.
To this it is had to add the passion
for the good things and the desire
to improve and experiment that have
brought to the creation of as exclusive
products as “Sfogliatine” without
yeast, but the “Dough for pizza” also,
without forgetting the “Bread
of the poor men” named “Piadina” (like
Tortillas), considered also an unleavened
, because it is completely made without
yeast, that today is still cooked by
hand on iron plates as the old tradition
it requires.
As if is this had not been enough,
since 1998, L’Antica Cucina has
completed the brave choice to realize
only produced by Organic Agriculture
submitting the whole firm to the certification
and voluntary control according to
the CE Rule 2092/’91, which asks
for notable appointment of human resources
and to finance binding the Firm in
the exclusive use of organic ingredients
in the respect of the environment and
the salubriousness of the products.

Las
recetas de la tradición, sabores
antiguos, las harinas de cereales de
calidad indiscutida como el farro ( Spelta)
,il kamut (trigo duro), moleduras a piedra,
el fermento con levadura natural, el
empleo de condimentos de calidad como
aceito virgen extra de aceituna exprimida
a frío, pomodoro,mozzarella
son los ingredientes que caracterizan
las
especialidades de horno dell' Antica
Cucina.
A este se tiene que añadir
la pasión por las cosas buenas
y la gana de mejorar y experimentar
que han llevado la creación
de muchos productos como exlusivos
pequeños hojaldre al té verde
sin levadura, pero también bases
por pizza, pizza, cracker, hogazas
pequeños bastoncitos de pan.
Sin olvidar el pan de los pobres, el tortillas, considerada también un ácimo
porque sin levadura, que es cocida hoy todavía quieren como a uno a un
sobre láminas de hierro como la tradición solicita.
Como si éste no bastara del
1998 ha cumplido la elección
atrevida de sólo realizar producido
por agricultura biologíca sometiendo
la entera empresa a la certificación
controlo voluntario según Reglamento
CE 2092/91, el que solicita notable
empeño de recursos humanos y
financieros vinculando la empresa en
el empleo exclusivo de ingredientes
biologìcos,nel respeto del entorno
y de la salubridad de los productos. |
