| ASSO DI COPPE
Classification: IGT Sicily Chardonnay.
Type: White.
Grape Variety: 100% Chardonnay.
Altitude: 500 metres above sea level.
Terrain: Soil of medium texture.
Yield (per plant): Approx. 1.2Kg.
Yield per Hectare: Approx. 50 quintals.
Vine Density: 4200 vines per hectare.
Training System: Vertical trellised.
Pruning: Guyot System.
Harvest Period: The grapes are carefully selected and handpicked in the later part of August.
Vinification: The grapes are soft pressed and then fermented at a controlled temperature in steel vats. The ageing process continues until the following spring when the wine is bottled.
Alcoholic Content: 13.5 % vol.
Sensory Characteristics
Colour: Straw yellow with gold tinges.
Bouquet: Stylish and leisurely with sweet hints of tropical and citrus fruits and green apple.
Flavour: A dry wine endowed with a moderate acidity and a tropical finish.
Food and Wine Pairing: A perfect accompaniment to fish and shellfish, seafood pasta or rice dishes. Serve at 10 – 12 ° C.
