| Classification: White IGT Sicily.
Type: White.
Production Zone: Cda Arrigo Linguaglossa (Catania).
Grape Varieties: Inzolia 40%, Carricante 30%, Minnella 30%.
Altitude: 600 metres above sea level.
Terrain: Volcanic soil.
Yield (per plant): Approx. 1.2Kg.
Yield per Hectare: Approx. 50 quintals.
Vine Density: 4200 vines per hectare.
Training System: Vertical trellised.
Pruning: Spurred cordon.
Harvest Period: The grapes are carefully selected and handpicked in the later part of September.
Vinification: The grapes are soft pressed and then fermented at a controlled temperature in steel vats. The process of aging takes place on the fine lees and continues until the following spring, when it is bottled.
Alcoholic Content: 13 % vol.
Sensory Characteristics
Colour: Straw yellow with gold tinges.
Bouquet: Pronounced and lingering with sweet touches of orange blossom, pineapple and ripe apple.
Flavour: A fresh-tasting wine, endowed with a notable length on the palate and a moderate acidity.
Food and Wine Pairing: A perfect accompaniment to light antipasti, fish and shellfish and fresh cheeses.
Serve at 10-12º C.
