Classification: Red IGT Sicily.
Type: Red.
Production Zone: C.da Arrigo Linguaglossa (Catania).
Grape Variety: Nerello Mascalese.
Altitude: 550 metres above sea level.
Terrain: Volcanic soil, rich in minerals.
Yield (per plant): Approx. 1.2 Kg.
Yield per Hectare: Approx. 50 quintals.
Vine Density: 4200 plants per hectare.
Training System: Vertical trellised.
Pruning: Spurred cordon.
Harvest Period: The grapes are carefully selected and handpicked in the first few weeks of October.
Vinification: The crushing and stemming process is followed by maceration, undertaken at a controlled temperature, during which the important tannins and colours are extracted. Ageing takes place in steel tanks for approximately 10 months followed by 3 months of bottle ageing.
Alcoholic Content: 13 % vol.
Sensory Characteristics
Colour: Ruby red, tending towards garnet with a moderate bite.
Bouquet: Polished aromas of fruits of the forest, notable on first impact then veering towards a spicy flavour.
Flavour: Leisurely and pervasive with a firm structure and an agreeable fruitiness.
Food and Wine Pairing: The perfect accompaniment to rich and flavoursome dishes, red meat and semi-mature cheeses. Serve at 16°C.
