| Classification: IGT Sicily Chardonnay.
Type: Sparkling white wine.
Grape Variety: 100% Chardonnay.
Altitude: 500 metres above sea level.
Terrain: Soil of medium texture.
Yield (per plant): Approx. 1.2Kg.
Yield per Hectare: Approx. 50 quintals.
Vine Density: 4200 vines per hectare.
Training System: Vertical trellised.
Pruning: Guyot System.
Harvest Period: The grapes are carefully selected and handpicked in the second week of August.
Vinification: The grapes are soft pressed and then fermented at a controlled temperature in steel vats. In the following spring the wine is bottled after a short bottle fermentation.
Alcoholic Content: 13.5 % vol.
Sensory Characteristics
Colour: Straw yellow with gold tinges and an even perlage.
Bouquet: Elegant and lingering with subtle hints of white-fleshed fruit and some yeasty aromas.
Flavour: A dry golden sparkling wine, endowed with moderate acidity and rich fragrances. It also boasts a good length on the palate.
Food and Wine Pairing: A perfect accompaniment to aperitifs e light dishes. Serve at 8 – 10 ° C.
