Type: Red.
Production Zone: C.da Arrigo Linguaglossa (Catania).
Grape Varieties: Nerello Mascalese, Nerello Cappuccio.
Altitude: 550 metres above sea level.
Terrain: Volcanic soil, rich in minerals.
Yield (per plant): Approx. 1.2Kg.
Yield per Hectare: Approx. 50 quintals.
Vine Density: 4200 vines per hectare.
Training System: Vertical trellised.
Pruning: Spurred cordon.
Harvest Period: The grapes are carefully selected and handpicked in the early part of October.
Vinification: The process of crushing and stemming is followed by maceration, at a controlled temperature, that favours the extraction of the most important colours and tannins. The ageing process takes place, in part, in oak vats (35 or 50 hectolitres) and in part in tonneaux (550 litres) for more than a year and continues after bottling for another 5 or 6 months.
Alcoholic Content: 13.5 % vol.
Sensory Characteristics
Colour: Bright ruby red.
Bouquet: Pervasive with agreeable hints of spices, liquorice and fruits of the forest.
Flavour: Lingering, warm and well rounded, thanks to it velvety tannins. It is endowed with a notable polish, characterized by a faultless balance between its charred woodiness and its aromas of ripe vine fruit.
Food and Wine Pairing: A perfect accompaniment to roasted and braised red meats, game and mature cheeses. Serve at 16°C.
