| Additional description of the product |
| Marly hilly soil: vineyards situated on East and south facing hillsides. Vines trained with modified double arched cane system, 4000 vines per hectare.
Harvest: by hand, towards the end of September; 60-65 quintals per hectare.
Vinification: the bunches, in perfect condition, are left on straw mats under a Northeast facing roof, from which direction the Bora wind, dry and cold, blows from October to December. The grapes dry naturally and reduce the yield to 18 litres per quintals. Before Christmas the grapes are pressed and a dense must is obtained and left to ferment in French oak barriques, half new and half used. Fermentation and its subsequent arrest after about one month to preserve the natural sugar residues are achieved through a system unique to this producer involving heating and cooling of the barriques. This means that the must/wine is not decanted.
Intense amber colour; acacia honey, walnut husk and vanilla bouquet. Sweet and concentrated, with hints of dry fruit, figs, citrus fruits and caramel combined with the typical tannin content the grapes.
Best served with: Perfect with patè de fois gras and fermented cheeses, or to enjoy alone. |

Imboccata
la strada turistica della Rocca Bernarda, da Ipplis deviando
verso una dolce collina, si sale al centro dell'azienda
agricola Scubla, che domina i suoi vigneti disposti tutt'intorno
e digradanti verso i boschi che orlano il fondovalle. Ma è il
terreno, insieme alle tencologie e alla sapiente mano
dell'uomo, che domina questa zona e il suo vino. Costituita
pressochè integralmente da una marna detta "ponca", che si
sgretola sotto l'azione di sole e pioggia, questa terra è
ricchissima di microelementi e sali. Grazie ad essa, i vini
possono esprimere tutto ciò che racchiudono in sè, riuscendo
veramente tipici, ricchi di profumo e di corpo, capaci di
suscitare piacevoli
sensazioni
tanto ai profani quanto agli addetti ai lavori.
La produzione Roberto Scubla, con una media di 60.000 bottiglie
all'anno, è divisa tra i bianchi (65%), i rossi (30%) e il
Passito di Verduzzo "Cràtis" (5%). Con nuovi impianti aumenterà
la quota dei rossi, ma senza che diventi prevalente.
Il lavoro e lo studio sono improntati alla ricerca di caratteri
di eleganza e finezza, sia nei bianchi che nei rossi. Nel primo
caso la scelta è quella dello sviluppo in botti d'acciaio
termocondizionate, per conferire ai bianchi in purezza la
massima tipicità e l'espressione fruttata dell'uva; per i
secondi l'affinamento in legno è dosato, per rispettare la
supremazia del vino.
Gli uvaggi, vero per il Pomèdes Bianco e due mosti per il Rosso
Scuro, seguono un progetto ben preciso che li ha originati.
L'azienda è
presente in tutte le principali Guide dei vini italiani dal 1992 e
nella Guida dei vini del mondo 1996 del Gambero Rosso/Slow Food.

Turning
into the hilly tourist road from Ipplis toward a soft rise, you
come to the centre of the centre of the Azienda Agricola Scubla
that stands out over the vineyards, which surround it at 360°
and that slope inwards towards the woods lining the bottom of
the valley. But, besides the technologies in the cellar and the
skilful hand of man, it is the soil that plays a leading role
characterising this area and its wine. It mainly consists of a
particular marl called "ponca" that
crumbles under the sun and rain making it extremely rich with
microelements and salts. The wine can thus express everything it
has enclosed within it, becoming really typical, characterised,
full of perfumes and body, able to arouse pleasant sensations in
the profane and the connoisseurs.
The
production of Roberto Scubla, with an average of 60.000 bottles
per year is divided among white wines (65%), red wines (30%) and
the sweet Verduzzo "Cràtis" (5%). After the new plantings the
red wine share will increase, although it will not become
predominant. The work and the study are based on the research of
traits of elegance and finesse, both for the white and red wines.
For the formers the choice falls in the development in
temperature controlled steel vats to give the whites the maximum
typicality and the fruity expression of the grapes; for the
latter ones the ageing in wood is measured out to respect the
supremacy of the wine. The blends, a true one in the case of the
Pomédes Bianco and two musts for the Rosso Scuro, follow the
precise project that originated them.
