Andalusia is one of the warmest regions of Europe. It has a temperate, Mediterranean climate with hot, dry summers and mild winters with irregular rainfalls.

Andalusia is the world's largest producer of olive oil and its flavour is basic to the region's cooking. Starting at breakfast, you can eat toasted bread, drizzled in oil, with morning coffee.
Every province of Andalusia has excellent olive oil, and some of them enjoy the quality label of "denominacion de origen" (designation of origin, or D.O.) as the following: D.O. Baena, D.O. Sierra de Segura, D.O. Priego de Cordoba, D.O. Sierra Magina, D.O. Sierra de Cadiz, D.O.P. Antequera, D.O.P. Poniente de Granada, D.O. Montes de Granada and D.O. Sierra de Cazorla. |
