Vinification base wine: Bunches selected manually. Entire grape bunches pressed. Fermentation with selected yeast. Fermentation temperature: 16° C. The base wine is compound of 50% Chardonnay, 40% Riesling and 10% Pinot Noir. The foam or bubbles taken is done thru Charmat method, during 75 days. After being bottled, and before being labeled, the bottles stay in a resting position for 45 days.
