Vinification: Bunches selected manually. Fermentation with selected yeast. Maceration is made in rotative tanks under 25˚C - 27˚C, during 10 days. Complete malolactic fermentation. 80% of the wine stay 12 months in the stainless steel tanks and the other 20% of the wine are kept in French oak vats for 6 months. The wine stays during 4 months in bottles before being commercialized.
